Everyone loves cupcakes (at least I think). Instead of purchasing cupcakes in the store, which cost $2.99 and upwards, you can make your own at home. For less than $10 in ingredients, you can make three to four batches. Each batch contains 12 cupcakes. That works out to $.20/cents per cupcake. Can’t beat that. And not to mention the fact that they are fresh.

 

 

Ingredients

 

  • 3 Eggs
  • 1 Tablespoon of Butter
  • 6 Full Spoons of Butter
  • 3 Spoons of Icing Sugar
  • 1 Box of Devils Food Cake Mix
  • 100 ml of 35% Whipping Cream
  • 2 Cups of Water

Directions

Devils Food Cake Mix Preparation

In a large bowl empty the whole box of devils food cake mix. Add one cup of water. Next add your three eggs. Mix all the ingredients together, making sure the eggs are well blended into the mixture. You will notice the mixture gets pretty thick, so keep adding water from your second cup as you mix.

You can mix all of this together with a kitchen hand mixer or even a spatula. Once the ingredients are well mixed together, let it sit for a few minutes to settle. While you are waiting for the mixture to settle, prepare your cupcake pan.

Start by spraying some canola oil in each pocket, this way you will avoid the cupcake paper holders from sticking. Next place your cupcake paper-holders in the pockets and pour mixture into each pocket. Try not to overfill. I usually fill each pocket 3/4 full, because the mixture will rise through cooking.Next place it in the oven on high 350 degree heat.


 

 

 

 

 

Cooking Time: 15 Minutes

Peanut Butter Mixture

While the cupcakes are cooking, you will prepare the icing which consists of peanut butter, icing sugar and butter. Add all your ingredients together and mix well. Really well. The mixture will thicken. The more you mix it, the more it thickens.

 

 

 

 


 

Final Prep:

Now that the cupcakes are cooked, it’s time to apply icing to them. Simply take a spatula or your wooden spoon and apply to the cupcakes. I would highly advise you to let the cupcakes cool for about 10 minutes, before applying icing. If you apply icing too early, it will simply melt and run off your cupcakes. Creating an ugly mess.

Total Cooking Time: 30 Minutes

Now that all cooking is done, your cupcakes are ready to serve. Hope you enjoy this recpie. It’s one of my faves, it’s simple and easy to make.

chili, finance fox, finance, cooking, preperationFall is here and winter is just around the corner. One of my favorite dishes during these two depressing seasons is chili. Nothing beats a spicy hot bowl of beef chili on a cold day. This chili recipe is straight forward and easy to make. It uses fresh veggies (you get your daily intake of veggies), a lot of different spices and even some beer.The recipe is pretty straight forward, but it does take time to cook and do it right. Total cooking time is roughly 3 hours from start to finish. In the end you will have some great chili to eat for days, take to lunch (don’t forget to be frugal) and the best part is that it won’t go bad once in the fridge. Chili is easy to heat-up in the microwave and it’s pretty filling as a meal. Add some toast and you have an amazing dinner or lunch.

Ingredients

  • 2 Lbs of Fine Ground Beef
  • 1 Tablespoon of Vegetable Oil
  • 2 500ml Cans of Red Kidney Beans
  • 2 Cans of Diced Tomatoes  (do not drain)
  • 2 Small Cans of Tomato Paste
  • 1 Tablespoon of Vinegar
  • 2 Large Spanish Onions (Diced)
  • 2 Tomatoes (Diced)
  • 2 Green Bell Peppers (Diced)
  • 6 Garlic Cloves (Minced)
  • 1  Tablespoon of Sugar
  • 7 Tablespoons of Ground Cumin
  • 1 Tablespoon of Dry Oregano
  • 5 Green Hot Peppers
  • 4 Green Onions
  • 3 Hungarian Hot Peppers
  • Shredded Cheese (Preferable 4 Cheese Blend)
  • 1 Beer (Your choice)

Directions

Beef Preperation

In a large frying pan add the table spoon of vegetable oil. Once the oil is hot, add the beef on top.  Cook at medium heat and continuously break up large pieces of ground beef with a spoon or spatula.  Add a little salt and ground pepper to the beef. Once browned drain fat off of ground beef.

Next add your diced veggies (onion, bell peppers, hot peppers and garlic). Slowly stir and mix in with the beef. This is done on a very low temperature, because you don’t want to overcook the beef. Keep stirring until veggies are soft and translucent.

Cooking Time: 20 Minutes

Broth Mixture

While your beef and veggies are cooking, on the next stove top you are preparing the broth mixture. Eventually you will combine the two.  Take your freshly diced tomatoes, two cans of diced tomatoes, two cans of tomato paste, two cans of red kidney beans and tablespoon of vinegar in a large pot.

Mix and stir all the ingredients slowly on medium heat. Keep stirring until you start to see the mixture starting to bubble. At this point you are ready to combine the beef and veggie mixture into the pot.

Cooking Time: 25 Minutes

Final Cooking Prep:

Now that you’ve combined two mixtures together you are in the final stage of your beef chili cook off. Keep stirring all the ingredients over medium heat.  This stage will roughly take you 2 hours to finish off cooking your chili.

At the 1 hour mark to finish, add your 7 full spoons of ground cumin, 1 teaspoon of dry oregano, 1 tablespoon of sugar and 1 tablespoon of ground pepper. Keep mixing it all into the bubbling beef chili.

Once the chilli is starting to bubble, which is roughly at the  1/2 hour to go until finish, you want to add a whole bottle of beer. Not only will this give your chilli extra added flavor, but make it bubble even more, creating a pretty unique taste.

Once your cooking is done, finally add 1/4 of a bag of shredded cheese. Reason for adding it now, is that it will thicken the chili slightly and give it the pizza cheese stretching effect. Looks good and tastes even better.

Total Cooking Time: 3 Hours

 

 

 

 

 

 

Now that all cooking is done, let it cool for about 15minutes before serving. Pour into a bowl, sprinkle some shredded and voila, your chili is ready. Enjoy, and don’t forget to have a beer with it.

Breakfast is one of my favorite meals of the day. Not only is it simple to make, but there are so many different varieties to keep mixing up, that way one could never get bored.  In today’s edition of Home Cooking, I wanted to share with you a simple, yet very tasty, low on the calories and full of protein breakfast. If you are looking to shed a few pounds, eating a good healthy breakfast is ideal. I wish I had more time in the mornings to throw something like this together, but this is my typical weekend breakfast. It’s simple to make and it takes less than 10 minutes from start to finish.

What Ingredients You Need

  1. 2 or 3 Eggs
  2. Milk
  3. Bagel or Toast Bread
  4. Butter or Margarine (you can even use vegetable oil)
  5. Cottage Cheese
  6. Cream Cheese Spread

Preparation

Start by beating  the eggs together gently with a fork or spoon. Once the eggs are mixed together, spray some salt on top and pour in a dash of milk. Mix it all together, to create a white/yellowish mixture consisting of eggs and milk.

 

 

 

 

 

Next, pre-heat the frying pan on low to very low medium heat. You don’t want cook the eggs on high heat, because you will simply nuke them. Once the pan is warm enough, add 1 table spoon of butter (salted or unsalted. In this case I used butter/canola oil mixture. Pour in the eggs/milk mixture and slowly stir. You can use a wooden spoon or a stainless steel spoon.

While the eggs are cooking, pop in the bagel into your toaster and pull out your cream-cheese spread from the fridge. This way it’s not hard and is ready to be spread over the bagel with ease.

Final Prep

Now that your eggs are done, simply place them on the plate. Add two or three spoons of cottage cheese on the side and add the bagel with cream-cheese spread. As you can see from the pictures, I even added some chocolate milk as a beverage for even more protein. All of this combined for breakfast, with give you a full blast of protein to start your day right. Not only is this breakfast totally healthy and low in calories, but it tastes good too. Since I enjoy cooking so much, I decided to incorporate it into Finance Fox.I missed my original calling (chef), so I try to  make up for it at home. Thursday Night Dinner: Steak & Goat Cheese with Two Side Summer Salads

Steak & Goat Cheese

When it comes to choice of steak, you can pretty much use whatever kind of steak you prefer. Rib eye, prime rib, fillet, t-bone or any other steak cut you prefer. Personally I prefer the rib eye and fillet, but those are just my preferences.

1. Marinated steaks the previous night and left them marinated for about 24hrs. This allows the steaks to fully absorb the marinate and garlic.

2. I only used olive oil, garlic and new york steak spice. With a brush dipped in olive oil marinate the steak front and back with the oil. Reason this is done, is because it allows the steak marinate to stick better to the steak and also when you throw it on the grill the steak will not stick. Next add the steak spice, by drizzling it over the steak and with your other hand slowly rubbing into the steak. I prefer either the Montreal Steak Spice or New York Steak Spice, but you can use whatever spice you’d like. Finally take a few garlic cloves, cut them up in halves. Throw them in and around the steak. By leaving the garlic (covered with steak), it will give it a fresh garlic scent, sorta what you would get in a restaurant, if you were to order a steak. Cover the steak with a tight plastic lid or shrink wrap will do the trip ask well and leave it in your fridge for at least a few hours, but for best results up to 24  hours.

3. Cooking the steak totally depends on how you like your steak done. I like my steak medium-rare, which means there is some redness and juices inside. The juicier the steak, the better it will taste. This steak cooking took me roughly 15 minutes on low heat. Cooking steak on high heat will only nuke them. You want to cook it slowly, flip often and you will get some amazing results.

 

 

 

 

 

 

Tomato & Green Onion Salad

1. Take some cherry tomatoes, wash them in cold water and slice them in halves. For the green onions, you want to wash them thoroughly and cut into medium sized pieces.

2. Combine the green onions and tomatoes, add some vegetable or olive oil and some salt. Mix all of it together and you have one quick, easy and light salad.

 

 

 

 

 

 

Grilled Peppers & Garlic Side

This is one of my favorite side dishes. It can go with just about anything, because it’s like and punches a lot of flavor. It goes perfectly with steak, ribs, mashed potatoes or as a salad on its own.

1. Take 2-3 sweet red or yellow peppers, cut them in halves and place them on the grill. The cooking time on the grill will be about 20 minutes roughly, on medium temperature. Depending your grille, you will see when the peppers are ready, since the outside skin turns either black or dark brown.

2. Once the pepper halves are fully cooked, take them off the grill and put aside for about 5 minutes to cool off.

3. Now take the cooled off pepper halves and peel the skin using a small kitchen knife. Try and take off as much of the skin off as possible, but don’t worry if you don’t take every bit off. It’s simply impossible to do so. Once done peeling, cut the pepper halves into strips, roughly the size if your index finger in width. Finally crush and chop some garlic, you will need roughly 2-3 small garlic cloves. If you’re a garlic lover, than don’t hesitate to add more. One thing to keep in mind, is to balance the garlic with the peppers. You still want to be able to feel the taste of the peppers.

4. Combine the garlic and peeled peppers, add some vegetable oil, salt, mix together and serve.

 

 

 

 

 

 

 

Finally let’s eat. You’ve done all the prep work, now you are ready to eat. This meal roughly takes 30-40 minutes to prepare. It’s easy, filling and you get a lot of different flavors in one meal. On top of it, steak with goat cheese is simply amazing, so don’t forget to add on to the side of your plate. This meal can be cooked for one or more people, plus if there is any unfinished salads, you can pack them into lunch containers and take it for lunch. The salads taste good semi-warm or cold.
